It is Feb 17th today as I write this and we have many new farmers who have signed up from some facebook posts Mark has put up! We also had our first Zoom session for area organizers for Calgary and Sherwood Park. Amy was also there and she is going to be handling a lot of the calls with farmers.

Amy's Corner:
It’s never easy getting through an Albertan winter, even if you live in Southern Alberta. Our winds are extraordinary! The winds blew so hard one day, our house is now covered in dirt from an open field. We all know the drill. But I think the weather is changing quickly now. This February has been so mild. It feels more like March. No complaints here.

Our local farmers in Southern Alberta are getting ready for Spring and so are we! As we imagine all of the fields being plowed, fertilized, and planted, I get excited thinking about the first sprouts in their beautiful bright green colour looking for some sunshine and warmth. We are so close I think I can taste it.

Local green houses are planting now. I wonder what the first local produce will be? Maybe lettuce, mescalin salad mix, or maybe baby spinach greens. Then possibly peppers, cucumbers and even tomatoes. I can hardly wait to taste that freshness once again!

We will be opening our doors sometime in February and we need people to be volunteer customers, farmers, drivers and sorters. We have some people signed up but we need more volunteers to do the trial runs, make sure everything runs smoothly before we open it up fully to customers.
|
We are going to be bursting with all kinds of fresh produce soon and be full of new customers. Our local farms online, will be just like a bustling spring market!

Talking about Chicken and Broccoli!

Chicken Divan
|
- 6 chicken breasts (deboned)
- Cook at 350 for about 20 min.
- 2 heads of broccoli chopped and steamed for about 6 minutes
- 1 tin cream of chicken soup
- 1 tsp curry powder
- 1 tsp lemon juice
- ½ cup mayo
- ½ cup grated sharp cheddar cheese
- ½ cup bread crumbs
- Grease 2 quart casserole dish
- Put in par-cooked broccoli
- Layer sliced chicken on top of broccoli
- Mix curry powder, mayo, soup, and lemon juice
- Pour over top
- Sprinkle cheese on top
- Sprinkle bread crumbs on top
- Heat at 350 for 20 to 30 min or until bubbling
- 1 & ½ cups raw rice
- ¼ cup diced green pepper
- ¼ cup diced red pepper
- ¼ cup diced onion
- Cook rice in usual way
- Add veggies in last 10 minutes of cooking
