Indian Spiced Asparagus Stir Fry

Indian Asparagus Stir Fry showcases my favorite kind of vegetable recipe to share with you! Asparagus Subzi requires just a few basic ingredients, has BIG flavor, is quick to make, and celebrates a beautiful seasonal ingredient. Crisp tender asparagus flashed in a pan with toasted spices and gram flour topped with a squeeze of lemon is an absolute delight.

Ministry of Curry

Finding the spices: if you are not familiar with Indian Cooking you can go to an Indian Spice store, or check out the Ethnic or International Food Isles of both Walmart and Superstore. Some of the spices are familiar to us but have different names ... like lentils being called Dahl, or chickpeas called Chana Dal or Besan. We use chick pea flour on our fish cakes to make them super crispy!

Apple Betty Recipe

While many may consider this a fall dessert because that is when apple picking is going on and it is the best time to get in season apples we enjoy it all year long. During the summer months, I like to put a big scoop of vanilla ice cream on top and sometimes a little drizzle of when eating this easy apple betty recipe. Yum!

Check out the recipe!
What we do differently is use half fresh apples and half the apples from our apple cider... so it is a bit like rumtopf (if you haven't had this German dessert - well here is a link for that! https://www.thespruceeats.com/how-and-when-to-make-rumtopf-fruit-1446792) ... we use lots of cinnamon or nutmeg... and amazing with whipped cream or ice cream topping.

The flavour is a bit sharp, sweet and tangy, a strong cider taste, spiced nutmeg and cinnamon... just wonderful! PS When we make our cider we don't use the core, but keep the apple peals. That is because we use the apples all the time in the bettys and don't crush the apple as some call for.

Did you know?

Fort Macleod was the first cattle town in the Canadian West????

Early ranching was centered around the headquarters of the North West Mounted Police

BC's O'Keefe Ranch

Step Back In Time...

To the early days of the Okanagan Valley. The Ranch was founded in 1867, and in its earliest days was at the end of the wagon road into the Okanagan Valley and the site of the stage coach depot. It was a small, self-contained community, with a Post Office, blacksmith shop, grist mill, and even its own church and cemetery. Many of the original buildings still exist, and are a delight to explore.

Summer Ranch Fun!

Bar U Ranch National Historic Site
An hour's drive southwest of Calgary on Alberta's Cowboy Trail (Highway 22) lies Bar U Ranch National Historic Site of Canada. It's a place to uncover the colourful history of ranching in Alberta. You’ll learn about the mythical cowboys who helped establish one of the province’s most successful ranching operations. Bar U is one of the longest standing ranches in Alberta. This historic working ranch is open from May to September and is a great place to learn old-style ranching ways. Go ahead and try your hand at roping and other ranch skills.
During your visit you’ll spot cattle, horses, chickens and other farm animals. There’s also a cookhouse restaurant and a gift shop.
